About the Fishery
Raises white sturgeon on four farms in Elverta, Wilton, Elk Grove and Ione, and harvests and processes its caviar and meat at the Elverta farm on East Levee Road.
Began in Elverta in 1985 as Sierra Aquafarms, took the name Sterling Caviar in 2006 and merged with Tsar Nicoulai Caviar in September 2024.
Sells caviar online with overnight shipping; its sturgeon meat goes to restaurants and shops, among them RW Seafood in Rocklin and Sunh Fish Co. in Sacramento.
Its white sturgeon is a Seafood Watch Best Choice, according to the company.
